Ratatouille Recipe
Ratatouille is chock full of veggies, and with less than 150 calories per serving, is one of my favorite foods to help lose excess body fat. Here’s how to make it: In a large skillet / stock pot, sautee 4 garlic cloves with 1 chopped red onion until the onion is soft. Add 1 chopped/cubed egglant (skin on) for about 10 minutes. Then add 1 yellow squash and 1 zuchinni, both chopped. When soft, add 2 cubs of chopped portabello mushroom, 3 chopped tomatoes, and cook another 15 minutes. Each time you add veggies to the pot, be sure to season with salt and pepper. I’ll also use parsley and basil. I’ll usually add a can of condensed tomato soup to create a sauce, and if I’m feeling really sinful, I’ll add 1/4 cub of grated parmasean cheese. Y

Now that I’ve started working out, my weight loss has accelerated, and I have more energy than ever! My workout plan consists of cardio and weight training. I’ll post more about my particulars, but just know that I am on treadmill for at least 30 minutes each day, and my weight training program is from a book entitled “The New Rules of Lifting: 6 Basic Moves for Maximum Muscle”. I wish I would have started journaling my weight-loss efforts a year ago when I start on this arduous journey. I’m only half way to my goal weight of 180, so I’ll just start today. My all-time high was 327 lbs. You’ll see my transformation thus far in the picture below. From 327, to 252. It hasn’t been easy, and it’s taken a lot of dedication and hard work, but I’ve never had a problem with either one of those once I put my mind to it. In future postings I will share what I’m doing, how I’m doing it, and share some the struggles and triumphs that I’ve dealt with. Share this:EmailPrintTwitterFacebookPinterestTumblrGoogle +1

Well, I’ve never considered myself much of a writer, but I’ve decided to start blogging. Who will find this interesting other than myself? Not a clue! But hopefully someone, somewhere will find something I say to be useful. Welcome to my world! Share this:EmailPrintTwitterFacebookPinterestTumblrGoogle +1

When sharing my weight loss success with others, I am often asked “What is your secret?”, “What kind of diet are you on?”, “Are you hungry all the time?”. I’ve had to find a system that holds me accountable. I am using a program from mynetdiary.com on my Android phone that allows me to log all of my food for the day. I log every single food I eat, even if it’s one or two potato chips. A few features that I really like: I told the program what my goal weight is, and the program automatically calculates my caloric needs based on my activity level. The program calculates all of my nutrients for the day. I have a running total of calories eaten and calories remaining. Share...
